What each ingredient does

Mackerel
The fish is the main component, and its flesh firms and turns opaque in the acidic liquid.
Vinegar
Acidity preserves the fish and gives it a sharp, tangy flavour.

The step that matters

Let the vinegar mixture cool before pouring. Hot liquid partly cooks the delicate fish and can make it break apart. Cooling the boiled vinegar first keeps the mackerel intact while it marinates in the acid.

Swap the clove

How well each one fits the dish's main ingredients (fennel, thyme, parsley, vinegar, pepper):

  1. Tarragonfits better
  2. Marjoramfits better
  3. Dillfits better
  4. Clovethe original

Fit is the average pairing score against fennel, thyme, parsley, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
