What each ingredient does

Endive
Forms the main body of the dish and becomes soft and tender when stewed.
Veal gravy
Provides moisture and savory flavor as the endive stews.
Sugar
Adds sweetness that balances the slight bitterness of endive.
Velouté sauce
Adds richness and a smooth, silky texture to finish the dish.

The step that matters

Squeezing out the water after blanching. Endive holds a lot of water after blanching. Removing as much as possible keeps the gravy from being diluted and lets the endive absorb its flavor during stewing.

Swap the endive

How well each one fits the dish's main ingredients (sugar, sauce):

  1. Mustardfits better
  2. Capsicumfits better
  3. Horseradishfits better
  4. Endivethe original

Fit is the average pairing score against sugar, sauce. Candidates are from the same food group and used in at least 100 recipes.
