Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the apples

  1. Pare and core the apples, then place them in a saucepan with enough water to cover.

  2. Stew the apples until soft, then beat them smooth.

Make the filling

  1. Mix in the sugar, butter, lemon juice, lemon peel, and egg yolks.

Bake and serve

  1. Line a dish with puff pastry, pour in the apple mixture, and bake at 350°F (175°C) for about 45 minutes.

  2. Before serving, grate sugar over the top until it looks white.

What each ingredient does

Apples
Break down into a soft pulp that forms the body of the pudding.
Egg yolks
Enrich the filling and help it set into a custard-like texture when baked.
Butter
Adds richness and a smooth, tender mouthfeel to the filling.
Sugar
Sweetens the pudding and helps brown the surface as it bakes.
Lemon juice
Adds acidity that brightens the sweetness of the apples and sugar.
Puff pastry
Forms a flaky, crisp crust that holds the filling in the dish.

The step that matters

Baking the filling. Egg yolks set as they heat, so the pudding must bake long enough to firm up. Pulling it too early leaves a loose centre, while overbaking can make the yolks grainy and dry.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter, lemon, egg):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Applethe original

Fit is the average pairing score against sugar, butter, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
