Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whips into a foam that sets into a light, rich body.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.
Lemon rind
Contributes aromatic oils that scent the cream with lemon flavor.
Pounded loaf sugar
Sweetens the cream and balances the acidity of the lemon.

The step that matters

Whisking until frothy. Cream must be whipped only until it holds a soft froth; overbeating turns it grainy and buttery. Draining the froth as it rises lets the thin liquid run off so the mold holds a firm shape.
