The flavor team

The pairs that carry this dish. Each one is judged two ways: how much aroma chemistry they share, and how many recipes mention both.

  1. Orange + lemontop 1% of all pairs
    Aroma overlapstrong
    Mentioned together10,634 recipes

    Shared aroma: 3-hexenal (apple, fruity).

  2. Lemon + sugartop 18% of all pairs

    Shared aroma: 2-nonenal (fatty, green).

  3. Orange + sugartop 20% of all pairs
    Aroma overlaplow
    Mentioned together19,212 recipes

    Shared aroma: beta-damascenone (apple, rose).

Lemon and sugar share little aroma chemistry, yet 53,532 recipes mention both: they likely work on texture and structure more than aroma.

What each ingredient does

Isinglass
Gelatin-like protein that sets the juice into a firm, wobbly jelly when cooled.
Oranges
Provide the main juice, giving the jelly its flavour, sweetness and acidity.
Lemon
Adds acidity that brightens the flavour of the orange juice.
Pounded loaf sugar
Sweetens the juice to balance the acidity of the citrus.

The step that matters

Dissolve the isinglass fully in boiling water. Isinglass must be completely dissolved before it is added to the juice. Undissolved particles will not set properly and leave a grainy or uneven jelly.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (orange, sugar):

  1. Vanillabetter flavor fit
  2. Lemonthe original

Fit is the average pairing score against orange, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
