Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the mixture as they set gently over low heat, giving the custard its body.
Cream
Adds richness and a smooth, velvety texture to the custard.
Seville oranges
Provide the sharp citrus acidity that balances the sweetness of the sugar.
Loaf sugar
Sweetens the custard and offsets the sourness of the orange juice.

The step that matters

Stir over low heat until thickened like custard, but do not let it boil.. Egg proteins set into a smooth custard at moderate heat, but boiling causes them to curdle and turn grainy, and the fool loses its silky texture.

Swap the orange
