Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Blanch the sweet and bitter almonds, then pound them to a paste with the orange‑flower water.

  2. Mix in the sifted loaf sugar and a little brandy.

  3. Whisk the egg whites and yolks separately for 30 minutes.

  4. Add the yolks to the almond mixture, then gently fold in the whipped egg whites.

Bake

  1. Butter a tin pan and dust it with bread crumbs.

  2. Pour the batter into the pan and sprinkle the top with sifted loaf sugar.

  3. Bake in a 400°F (200°C) oven for 30 to 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air, giving the cake its light, risen structure.
Sweet almonds
Ground into a paste, they supply the bulk and rich, nutty flavour of the cake.
Bitter almonds
Add a deeper, more intense almond aroma to the paste.
Loaf sugar
Sweetens the batter and, on top, adds a crisp sugary crust while baking.

The step that matters

Fold in the egg whites gently. Whipped whites hold air that makes the cake rise. Stirring or beating them in vigorously knocks that air out, leaving a dense, flat cake.

Swap the orange

How well each one fits the dish's main ingredients (almond, sugar, brandy, egg, butter, bread):

  1. Vanillafits better
  2. Figfits better
  3. Apricotfits better
  4. Orangethe original

Fit is the average pairing score against almond, sugar, brandy, egg, butter, bread. Candidates are from the same food group and used in at least 100 recipes.
