Why it works: Apple and ginger are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 1,424 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

To Preserve Apples

Ingredients

Directions

Prepare

  1. Pare, core, and quarter the apples.

  2. Finely pound the sugar.

  3. Layer the apples and sugar alternately in a jar with the white ginger.

  4. Let it sit for 8 to 40 hours.

Make the syrup

  1. Infuse the bruised white ginger in boiling water for 15 minutes.

  2. Strain and boil the infused liquid with the apples until clear and the syrup is thick, about 1 hour, skimming off any scum that rises.

Serve

  1. When ready to eat, remove the whole ginger.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the fruit body that softens and turns tender as it cooks in the syrup.
Loaf sugar
Sweetens the fruit and, at high concentration, draws out moisture to help preserve it.
White ginger
Adds a warm, spicy aroma and flavour that infuses into the syrup and apples.

The step that matters

Boiling the syrup until clear and thick. Sugar must reach a high enough concentration in the syrup to preserve the apples and set the liquid thick. Stopping too early leaves a thin, less stable syrup, while skimming removes scum that would cloud it.

Swap the apple

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonfits better
  2. Orangefits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
