Why it works: Pepper and ginger match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 6,800 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

To Pickle Beet-root

Ingredients

Directions

Prepare the beetroot

  1. Wash the beet-root thoroughly without cutting off any fibers.

  2. Boil the beet-root in plenty of water with a little coarse sea salt for 30 minutes.

  3. Check if the skin comes off easily; if so, it's done.

  4. Lay the beet-root on a cloth and rub off the skin with a coarse cloth.

Pickle and store

  1. Slice the beet-root and place it in a jar.

  2. Pour cold vinegar over the beet-root, which has been boiled with ½ ounce of whole black pepper and a piece of ginger per quart.

  3. Cover the jar tightly once the contents are cold.

What each ingredient does

Beet-root
Is the main vegetable; boiling softens it so the skin rubs off easily.
Vinegar
Provides the acidity that preserves the beetroot and gives it its sharp, tangy flavour.
Whole black pepper
Adds a warm, aromatic spice note to the pickling liquid.
Ginger
Adds a fresh, aromatic heat that complements the earthy beetroot.

The step that matters

Testing the beetroot for doneness before peeling. Boiling until the skin slips off easily shows the beetroot is cooked through and tender. Undercooked beetroot stays firm and is hard to peel, while overcooking makes it soft and watery.

Swap the ginger

How well each one fits the dish's main ingredients (vinegar, pepper):

  1. Tarragonfits better
  2. Dillfits better
  3. Parsleyfits better
  4. Gingerthe original

Fit is the average pairing score against vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
