Another Way to Pickle Young Onions

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Peel the small onions.

  2. Soak them in salt and water for 48 hours, changing the water 2-3 times.

  3. Drain the onions and let them dry completely.

  4. Place the dry onions in small jars.

  5. Boil white wine vinegar with whole black pepper and cloves, then let it cool.

  6. Pour the cooled vinegar over the onions in the jars.
