Lamb's Sweetbreads

Ingredients

Directions

  1. Blanch the sweetbreads and place them in cold water.

  2. In a stewpan, combine the sweetbreads, broth, pepper, salt, button onions, asparagus tops, and mace.

  3. Stir in the butter and flour, then stew for 1 hour.

  4. In a bowl, beat the egg yolks with cream, parsley, and nutmeg.

  5. Add the egg mixture to the stew, ensuring it does not boil; keep it hot and stir continuously to prevent curdling.

  6. Optionally, add very young French beans or peas.
