What each ingredient does

Lobster
Provides the main protein and sweet, firm texture of the salad.
Oil
Carries flavour and adds richness to the marinade, keeping the lobster moist.
Vinegar
Adds acidity to the marinade, seasoning the lobster and firming its surface.
Hard-boiled eggs
Adds creamy yolk and firm white for richness and structure around the border.
Mayonnaise sauce
Adds fat and creaminess that moistens and binds the salad.
Anchovy fillets
Adds salty, savoury depth that contrasts with the sweet lobster.

The step that matters

Marinate the lobster in oil and vinegar for 2 hours. Acid and oil slowly season the lobster and change its surface texture. Cut the time too short and the flavour stays on the outside; leave it too long and the acid can make the meat tough and chalky.

Swap the beetroot

How well each one fits the dish's main ingredients (lobster, vinegar, lettuce, pepper, egg, cucumber, anchovy):

  1. Mustardfits better
  2. Capsicumfits about as well
  3. Spinachfits about as well
  4. Beetrootthe original

Fit is the average pairing score against lobster, vinegar, lettuce, pepper, egg, cucumber, anchovy. Candidates are from the same food group and used in at least 100 recipes.
