Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Veal Pies

Ingredients

Directions

  1. Cut the veal into pieces and place in a stewpan with the onion, celery, sweet herbs, and a small amount of water.

  2. Warm through, then add more water and simmer gently until the veal is cooked.

  3. Strain the stock, let it cool, and remove the fat.

  4. Remove the bones and skin from the veal, season well, and place it in a pie dish lined with pastry.

  5. Chop the hard-boiled eggs and add them to the dish.

  6. Pound the ham or bacon, form into small balls with butter, and add to the pie.

  7. Add forcemeat-balls and fill the pie with the prepared stock, flavored with ketchup or chutney.

  8. Reserve some stock to pour hot into the pie after baking.
