Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the mixture so it holds its shape when turned out.
Heavy cream
Whipped into a light froth to add richness and an airy, creamy texture.
Strawberries
Provide the main fruit flavor, color, and body once pressed through a sieve.
Pounded sugar
Sweetens the strawberry base and balances the tartness of the fruit and lemon.
Lemon juice
Adds acidity that brightens the strawberry flavor and balances the sweetness.

The step that matters

Stir the isinglass mixture in until it just begins to set. Isinglass sets quickly as it cools. If the mixture thickens too far before the cream is folded in, the cream will not blend evenly and the set will be lumpy; if it is too thin, the cream will not hold its shape when turned out.

Swap the lemon
