What each ingredient does

Isinglass
Gelatin-like protein that sets the liquid into a firm, wobbly jelly when cooled.
Loaf sugar
Sweetens the syrup and helps give the jelly its body and flavour.
Scarlet strawberries
Provide the main fruit flavour, colour and aroma of the jelly.
Red-currant juice
Adds tart acidity and fruit flavour that balances the sweetness.
Lemon juice
Adds acidity that brightens the flavour and sharpens the strawberry taste.

The step that matters

Mix the isinglass in when it is nearly cold. If the isinglass is too hot it can lose its setting power, and if it is too cold it may begin to set before it is evenly mixed, leaving a lumpy or weak jelly.

Swap the currant

How well each one fits the dish's main ingredients (sugar, lemon):
