Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓
Lemon Cake
Ingredients
Directions
The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Make the batter
Separate the yolks and whites of the eggs.
Beat the yolks until frothy.
Add the grated lemon rind and sugar to the yolks.
Beat for 15 minutes.
Gradually add the flour while shaking it in with your left hand.
Fold in the beaten egg whites and lemon juice until well combined.
Bake
Pour the mixture into tins and bake at 350°F (175°C) for about 1 hour.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Whites trap air for lift, and yolks add richness and structure to the crumb.
- Sugar
- Sweetens the cake and helps the yolks whip to a light, stable foam.
- Dried flour
- Forms the cake's structure as its proteins set during baking.
- Lemon juice
- Adds acidity and bright lemon flavour to the batter.
- Grated lemon rind
- Adds aroma and lemon flavour from the oils in the peel.
The step that matters
Folding in the egg whites. Whites hold the air that makes the cake rise. Stirring them in vigorously knocks that air out, so fold gently with a spatula until just combined.
Swap the lemon

Fit is the average pairing score against egg, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
