Lemon Wine

Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients

Directions

Prepare the base

  1. Boil 1 gallon of water with 3 lbs of sugar for 1 hour.

  2. Pour the hot mixture over the peel of 4 lemons.

  3. Make a syrup by boiling the juice of the lemons with ½ lb of sugar.

  4. Mix the syrup with the lemon peel mixture.

Ferment

  1. When cool, place a toast covered with yeast on top.

  2. Let it stand for 2 days to start fermentation.

  3. Transfer to a barrel.

  4. Keep it filled to the top until fermentation subsides.

  5. Seal the barrel.

Bottle

  1. Bottle the wine after 3 months.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides the sugar that yeast converts to alcohol during fermentation.
Yeast
Converts sugars into alcohol and carbon dioxide, driving the fermentation.
Lemon peel
Contributes aromatic oils and flavour to the wine.
Lemon juice
Adds acidity and fresh citrus flavour to the wine.

The step that matters

Keep it filled to the top. Keeping the barrel full limits contact with air, which can let spoilage microbes and oxidation take hold while fermentation slows. Topping up protects flavour and keeps the wine clean.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, syrup):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, syrup. Candidates are from the same food group and used in at least 100 recipes.
