Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Forms the main body of the garnish and becomes tender through slow, moist cooking.
Stock
Provides the liquid that moistens and flavours the celery and forms the sauce.
Bacon
Adds savoury, salty fat that flavours the celery as it cooks.

The step that matters

Scald the celery in boiling water. Brief blanching softens the fibrous celery and sets its colour before slow cooking, so the pieces become tender rather than stringy or dull.

Swap the onion

How well each one fits the dish's main ingredients (celery, ham, lemon, clove):

  1. Carrotfits better
  2. Mustardfits better
