Why it works: Anchovy and sauce are a kitchen classic. They rank in the top 2% of all ingredient pairs, and cooks put them together in 2,057 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Red Mullet

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and bake

  1. Preheat the oven to 350°F (175°C).

  2. Remove the gills from the fish, leaving the insides intact.

  3. Wrap the fish in oiled paper and bake gently for about 25 minutes.

Make the sauce

  1. In a saucepan, combine the liquid from the fish with butter kneaded with flour, anchovy sauce, sherry, cayenne, and salt.

  2. Bring the sauce to a boil for 2 minutes.

Serve

  1. Serve the sauce in a tureen, and serve the fish with or without the paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Melts with the flour to form a roux that thickens the sauce and adds richness.
Flour
Kneaded into the butter to thicken the sauce as it heats.
Sherry
Adds acidity and aroma that balance the richness of the sauce.
Anchovy sauce
Adds a salty, savoury depth to the sauce.

The step that matters

Bringing the sauce to a boil. Flour thickens a sauce only when it reaches a boil and is held there briefly, so the starch swells fully. Stopping early can leave the sauce thin and floury-tasting.
