To Pickle Beef

Ingredients

Directions

  1. Boil the water, brown sugar, saltpetre, and salt in a pot, skimming off any scum that rises.

  2. Once no more scum rises, let it boil for 20 minutes, then remove from heat and let it cool completely.

  3. When cold, cover the meat completely with the brine.

  4. Boil the pickle every month, skim it carefully, and add a couple of handfuls of common salt.

  5. Rub the meat with a little salt and let it sit for a few hours before adding it to the pickle.

  6. Keep the meat closely covered.
