Vegetable Marrow

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Peel the vegetable marrow and cut it into finger-thick slices.

  2. Place the slices in a tin and add a small piece of butter on each.

  3. Bake in a moderate oven at 350°F (175°C) for nearly an hour.

  4. Prepare slightly buttered and hot toast.

  5. Lay a slice of the baked vegetable marrow on each piece of toast.

  6. Warm a little sweet chutney in butter and put half a teaspoonful on each slice before serving.
