The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide pectin and acidity, which give the jelly body and help it set.
Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Sugar
Adds sweetness and helps balance the tartness of the apples.

The step that matters

Reducing the apple liquid to 2 quarts. Boiling down the liquid concentrates the natural pectin and flavour of the apples. If it is under-reduced, the jelly may be weak and slow to set; if over-reduced, it can become too stiff and taste overly intense.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (apple, sugar):

  1. Pearfits better
  2. Vanillafits better
  3. Apricotfits better
  4. Lemonthe original

Fit is the average pairing score against apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
