What each ingredient does

Lemon jelly
Gelatine sets the mixture so it holds its shape when frozen and turned out.
Whipped cream
Adds fat and air, giving the frozen mixture a lighter, creamier texture.
Peaches
Provide the main fruit flavor and body once stewed and sieved into a puree.
Sugar
Sweetens the peaches and softens their texture during stewing.
Maraschino
Adds a sweet, aromatic cherry note to the peach mixture.

The step that matters

Turn out of the mold. The frozen mixture must be firm enough to hold its shape when unmolded. Gelatine sets the jelly, and the mixture needs to be fully frozen before turning out, or it may lose its form or break.
