Ingredients

Directions

The book says “a very cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Warm the butter, sugar, and syrup in a bowl.

  2. In a separate bowl, combine the flour, lemon peel, raisins, mixed spice, ground ginger, and baking soda.

  3. Add the warm mixture to the dry ingredients along with the sour milk and eggs. Mix until well combined.

Bake

  1. Pour about 12 oz. of batter into each tin.

  2. Bake in a cool oven at 300°F (150°C) for 1½ hours.

  3. Do not touch the loaves until baked to prevent them from collapsing.

What each ingredient does

Eggs
Bind the batter and add structure as the loaves set in the oven.
Baking soda
Reacts with the sour milk to produce gas that helps the loaves rise.
Sour milk
Its acidity activates the baking soda and adds moisture to the batter.
Butter
Adds fat for a tender crumb and rich flavour.
Flour
Forms the structure that holds the loaf together as it bakes.
Syrup
Adds sweetness, moisture, and helps the loaf stay soft and dark.

The step that matters

Leave the loaves undisturbed while baking. Batter leavened by baking soda sets gradually in the heat. Moving or opening the oven early can release steam and air before the structure firms, causing the loaves to sink or collapse.

Swap the ginger

How well each one fits the dish's main ingredients (flour, syrup, lemon, butter, sugar, raisin, milk):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerthe original
  4. Allspicefits less well

Fit is the average pairing score against flour, syrup, lemon, butter, sugar, raisin, milk. Candidates are from the same food group and used in at least 100 recipes.
