Gingerbread Loaf

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and brown sugar together.

  2. Whisk the eggs (whites and yolks) together and mix them in.

  3. Add the treacle, then gradually mix in the flour, cream of tartar, carbonate of soda, and spices.

Bake

  1. Pour the batter into a loaf pan and bake in a moderate oven at 350°F (175°C) until done.

What each ingredient does

Flour
Provides the structure that holds the loaf together as it bakes.
Butter
Adds richness and a tender crumb by coating flour and trapping air when creamed.
Brown sugar
Adds sweetness, moisture, and color to the crumb and crust.
Eggs
Bind the batter and add structure and richness as they set in the oven.
Treacle
Adds moisture, dark color, and a deep, sweet flavor typical of gingerbread.
Carbonate of soda
Reacts with the cream of tartar and heat to produce gas that lifts the loaf.
