Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavour of the filling.
Eggs
Bind the mixture and help it set firm when baked.
Fresh butter
Adds richness and a tender, moist texture to the filling.
Powdered sugar
Sweetens the filling and helps it brown lightly as it bakes.

The step that matters

Bake until set. Eggs set as their proteins coagulate with heat. Pulling the patty pans too early leaves a runny centre, while overbaking makes the filling dry and rubbery.

Swap the orange
