Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like protein that sets the liquid into a light, wobbly structure as it cools.
Egg white
Whisked into the cooled mixture to trap air, making it thick, white and foamy.
Lump sugar
Sweetens the dish and helps balance the sharpness of the lemon juice.
Lemon juice
Provides sharp acidity and bright lemon flavour that cuts the sweetness.

The step that matters

Add the juice and egg white only once the mixture is nearly cold. If the liquid is still hot, the egg white can cook and scramble rather than whisk smoothly, and the isinglass will not set properly once cooled. Waiting until nearly cold lets the whisked foam hold its volume and the mixture thicken evenly.
