What each ingredient does

Sweetbreads
Provide the tender, delicate meat that forms the body of the dish.
Butter
Adds richness and fat, carrying flavour through the stew.
Flour
Thickens the butter and gravy mixture into a smooth sauce.
Veal gravy
Supplies a savoury, meaty liquid base for the stew.
Cream
Adds richness and a smooth, silky texture to the finished sauce.
Oysters
Contribute a briny, savoury flavour and their own liquor to the stew.

The step that matters

Stirring the flour into the butter. Flour must be cooked briefly in melted butter to form a roux; adding it without stirring can leave lumps, and the sauce may stay floury-tasting and unevenly thickened.
