Ingredients

Directions

The book says “a slow oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Parboil the cucumbers, split them, and remove all seeds and soft parts.

  2. Fill the cucumbers with finely pounded forcemeat.

  3. Tie the cucumbers to keep them whole, then dust with flour.

  4. Roast in a Dutch oven at 400°F (200°C), basting with butter until browned.

  5. Serve with a good gravy.
