A Beautiful Preserve of Apricots

Ingredients

Directions

Prepare the apricots

  1. Choose the finest ripe apricots and pare them as thin as possible.

  2. Lay the apricot halves on dishes with the hollow part facing upwards.

  3. Strew an equal weight of finely pounded loaf sugar over the apricots.

  4. Break the stones and blanch the kernels.

  5. After twelve hours, put the apricots, sugar, and juice, along with the kernels, into a preserving pan.

Cook and pot

  1. Simmer gently until the apricots become clear, removing them as they do.

  2. Place the apricots into small pots and pour the syrup and kernels over them.

  3. Skim off any scum that rises and cover with brandy paper.

What each ingredient does

Ripe apricots
Provide the fruit, which softens and turns clear as it cooks in the sugar syrup.
Loaf sugar
Sweetens the fruit and, drawn out by standing, forms the syrup that preserves it.
Apricot kernels
Add a subtle almond-like aroma to the syrup as they cook with the fruit.

The step that matters

Simmer gently until the apricots become clear. Boiling hard can break the fruit apart and cloud the syrup. Gentle heat lets the apricots soften evenly and turn clear while they keep their shape, and removing each piece as it clears prevents overcooking.
