Ingredients

Directions

Make the frumenty

  3. Beat 3 egg yolks with a little nutmeg and 2-3 tablespoons of milk.

  4. Add the egg mixture to the wheat and stir over the heat.

What each ingredient does

Ready-boiled wheat
Forms the bulk of the dish, giving it a soft, porridge-like body.
New milk
Cooks with the wheat to make a thick, creamy liquid.
Egg yolks
Thicken the mixture as they heat, giving it a rich, smooth texture.
Currants
Add chewy sweetness and fruity flavour as they plump while boiling.

The step that matters

Stirring the egg yolks in over the heat. Egg yolks set when heated, so they can curdle into lumps if the mixture boils hard or they are added too fast. Stirring steadily while heating gently keeps the custard-like texture smooth.
