Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelling agent that sets the cream into a firm, sliceable shape as it cools.
Cream
Provides fat for richness and a smooth, velvety texture.
Wine
Liquid that dissolves the isinglass and adds flavour to the set cream.
Lemon juice
Adds acidity that brightens the flavour and balances the richness of the cream.
Sugar
Adds sweetness, sweetened partly by rubbing it over the lemon peel.

The step that matters

Do not boil after adding cream. High heat can split the cream and weaken the gel from the isinglass, so the mixture may not set smoothly. Keep it warm, not boiling, once the cream is added.

Swap the lemon

How well each one fits the dish's main ingredients (wine, cream, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Lemonthe original

Fit is the average pairing score against wine, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
