Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

To Stew Ducks

Ingredients

Directions

  1. Draw and clean the ducks, cutting off the head and neck close to the breast.

  2. Truss the ducks as for boiling.

  3. Mix the minced onion, sage, pepper, and salt; rub this mixture inside the ducks.

  4. Draw the neck skin down to keep in the seasoning and secure with a skewer.

  5. Rub the ducks with butter and dredge with flour.

  6. Place the ducks in a clean pan with a little soup.
