What each ingredient does

Fat hog leg
Provides the meat that is cured, its fat keeping the ham moist during long curing.
Coarse sea salt
Draws out moisture and seasons the meat, slowing spoilage during curing.
Saltpetre
Helps the meat keep its pink colour and inhibits bacterial growth during curing.
Coarse sugar
Balances the saltiness and adds mild sweetness to the cured flavour.

The step that matters

Covering the fleshy part with salts. Salt must fully reach the thick flesh, because uneven coverage lets bacteria survive and spoil the meat. Turning the leg during the pickle spreads the brine evenly through the cut.
