Gingerbread

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. In a bowl, mix ginger, sweetmeats, sugar, grated lemon peel, and grated orange peel.

  2. Make a well in the center of the flour and pour in the treacle.

  3. Mix everything together using two spoons until well combined.

  4. Prepare baking sheets by cleaning them and warming them in the oven.

  5. Brush the warm sheets lightly with clarified butter using a paste brush.

  6. Drop about 1 teaspoon of the mixture onto the sheets, leaving 2 inches between each drop.

  7. Bake in a 400°F (200°C) oven for a few minutes until done.

  8. Cool the gingerbread on the sheets before removing them.
