Why it works: Cream and butter are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 41,516 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓
To Stew Oysters
Ingredients
Directions
Prepare the oysters
Carefully open the oysters without damaging them and wash them in their own strained liquor.
Place the oysters in a clean saucepan and pour the strained liquor over them.
Heat the oysters slowly until they just begin to simmer.
Remove the oysters with a slotted spoon and take off the beards.
Make the sauce
Add the cream, mace, cayenne, and salt to the liquor and bring to a boil.
Mix the butter with the flour until smooth, then stir it into the boiling sauce.
Add the oysters back to the sauce and heat gently for 4 to 5 minutes until very hot.
Serve
Serve garnished with pale fried sippets and stir in a little lemon juice just before serving.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Oysters
- Provide the main flavour and tender texture, and release their liquor into the stew.
- Cream
- Adds richness and a smooth, velvety body to the sauce.
- Butter
- Adds fat and richness, and with the flour helps thicken the sauce.
- Flour
- Thickens the sauce so it coats the oysters rather than running thin.
The step that matters
Heating the oysters gently. Oysters toughen and shrink when overheated. Heating them slowly only until they just simmer, then warming them briefly in the sauce, keeps them tender and plump.

Fit is the average pairing score against oyster, cream, butter, flour, lemon. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
