What each ingredient does

Venison trimmings
Provide the meat and fat that release juices to build the gravy's flavour.
Boiling water
Extracts flavour and gelatin from the meat to form the liquid base of the gravy.

The step that matters

Skim the surface thoroughly. Skimming removes foam and loose fat that rise as the liquid boils. Leaving them in can make the gravy greasy and cloudy.
