Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale loaf
Provides a firm, sturdy base that holds its shape when fried.
Fresh butter
Fries the bread, adding fat for golden browning and rich flavour.
Egg white
Binds the flour to the bread so the coating dries into a thin, adhesive layer.

The step that matters

Drying the fried bread well. Residual moisture left in the fried bread makes it soggy and can stop the egg white and flour coating from setting, so the garnish loses its crispness on the dish.
