Knuckle of Veal with Rice or Green Peas

Ingredients

Directions

  1. Place the knuckle of veal in a pot and cover it with water.

  2. Bring the water to a slow boil, skimming off any scum that forms.

  3. If using, add green peas after skimming the scum.

  4. Add 1 teaspoon of coarse sea salt and simmer for 30 minutes.

  5. Stir in the rice and continue to simmer gently for another 1.5 hours, until both the meat and rice are tender.

  6. Optionally, add sliced cucumbers or shredded lettuces when boiling.

  7. Season with cayenne and mace 20 to 30 minutes before serving, adjusting salt as needed.

  8. Season with white pepper.

  9. For a richer flavor, substitute water with good veal broth.

What each ingredient does

Veal knuckle
Collagen from the bones and connective tissue enriches the broth and makes the meat tender after long simmering.
Rice
Starch thickens the stew slightly and absorbs liquid as it cooks until tender.
Green peas
Adds sweetness and a soft texture to the stew.

The step that matters

Skimming the scum after the boil begins. Foam that rises early contains proteins and impurities that can cloud the broth and give it an off flavor, so removing it keeps the stew clear and clean-tasting.

Swap the peas

The recipe marks peas as optional. How well each one fits the dish's main ingredients (veal, rice, pepper, mace, white pepper, cucumber, lettuce):
