A Common Apple Pudding

Ingredients

Directions

Make the crust

  1. Make a light crust by mixing flour and minced beef suet, then roll it thin.

Fill and boil

  1. Fill the crust with the boiling apples, lemon juice, and lemon rind.

  2. Tie the pudding in a cloth and boil for 1 hour and 20 minutes before Christmas.

  3. Boil for an additional 20 to 30 minutes after Christmas.

Finish and flavour

  1. For added flavor, stir in a small slice of fresh butter when sweetening.

  2. You can substitute grated nutmeg or cinnamon for the lemon rind if preferred.

  3. For a richer pudding, use ½ pound of butter for the crust and add 1-2 tablespoons of marmalade to the apples.
