Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and set into a firm, sliceable custard as it cooks.
Bread-crumbs
Absorb the hot milk to form the body of the pudding.
Milk
Soaks into the bread and provides moisture for a tender texture.
Butter
Adds richness and fat for a softer, more tender crumb.
Sugar
Adds sweetness and helps balance the eggs and milk.

The step that matters

Tie the cloth tightly and keep the water boiling. A loose cloth lets water seep into the mold and dilute the custard, while letting the water level drop can leave the pudding unevenly cooked. Egg proteins set with steady heat, so the pudding needs a consistent boil for the full time.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, bread, butter, egg):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Parsleyfits less well
  4. Capersfits less well

Fit is the average pairing score against milk, sugar, bread, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
