Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard base

  1. Drop the vermicelli into the boiling milk and simmer gently for 10 minutes, stirring occasionally until thick.

  2. Mix in the sugar, butter, and salt until well blended.

  3. Beat the mixture for a couple of minutes to cool it slightly.

Finish and bake

  1. Gradually add the whisked eggs and lemon rind.

  2. Just before baking, stir in the brandy.

  3. Pour the mixture into a baking dish and bake at 350°F (175°C) for 30 to 45 minutes.

What each ingredient does

Eggs
Bind the mixture and set into a tender, custard-like pudding when baked.
Vermicelli
Thickens the hot milk as its starch swells, giving the pudding body.
Butter
Adds fat for richness and a smooth, tender texture.
Sugar
Adds sweetness and helps the pudding brown lightly in the oven.
Brandy
Adds aroma and flavour added late so its volatile notes are not lost to heat.

The step that matters

Cool the mixture before adding the eggs. Eggs added to very hot milk can scramble or curdle. Beating the mixture to cool it slightly lets the eggs blend in smoothly and set evenly as the pudding bakes.

Swap the lemon

How well each one fits the dish's main ingredients (milk, sugar, butter, egg, brandy):
