Small Cocoa-nut Puddings

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Melt the butter and sugar together over low heat until boiling for 2 minutes, then let cool.

  2. Mix in the grated cocoa-nut, shredded citron, lemon rind, and beaten eggs.

  3. Add the strained lemon juice and stir well.

Bake and serve

  1. Pour the mixture into buttered pattypans or pudding cups and sift sugar over the top.

  2. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

  3. Serve hot for best flavor, but they are also good cold.

What each ingredient does

Eggs
Bind the mixture and set into a tender, custard-like structure when baked.
Butter
Adds richness and a tender texture to the pudding.
Sugar
Sweetens the pudding and helps brown the top as it bakes.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.
