A Fondu

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. Mix the new milk with the potato flour or arrowroot to form a smooth batter.

  2. In a saucepan, heat the additional milk or cream until boiling, then stir it into the batter.

  3. Add the butter and stir until melted and well combined.

Finish and bake

  1. Incorporate the egg yolks, salt, cayenne, and grated cheese into the mixture.

  2. Whisk the egg whites until firm and fold them into the mixture gently.

  3. Pour the mixture into a baking dish and bake at 350°F (175°C) for 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potato flour or arrowroot
Thickens the milk into a smooth base that holds the fondue together.
Eggs
Yolks add richness and set the mixture; whites are whisked to add lift and airy structure.
Cheese
Provides the main flavour and, as it melts, gives the fondue its body and savoury taste.
Butter
Adds fat for a smoother, richer texture and a rounder flavour.

The step that matters

Folding in the whisked egg whites. Whites hold air only when whisked until firm. Folding gently keeps that air in the mixture so it rises and stays light in the oven instead of deflating into a dense result.

Swap the potato

How well each one fits the dish's main ingredients (milk, butter, egg, pepper, cheese):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Asparagusfits less well
  4. Tomatofits less well

Fit is the average pairing score against milk, butter, egg, pepper, cheese. Candidates are from the same food group and used in at least 100 recipes.
