Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a firm jelly as it cools.
China orange juice
Provides the main orange flavour and most of the liquid body of the jelly.
Sugar
Adds sweetness and balances the tartness of the juice.
Lemon juice
Adds acidity to sharpen the flavour of the jelly.

The step that matters

Skim the mixture clean without boiling. Boiling would cloud the jelly and can weaken its setting power, so the mixture should be kept just below a boil while skimming off foam and impurities for a clear, firm result.
