Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin that sets the liquid into a firm, sliceable jelly.
Sugar
Sweetens the jelly and helps the syrup hold its body.
Strawberries
Provide the main fruit flavor, color and soft texture.
Lemon juice
Adds acidity that brightens the sweetness and flavor.
Red currant juice
Adds tart fruit flavor and extra acidity to the jelly.

The step that matters

Cool the isinglass before mixing. Isinglass is a gelatin that sets as it cools. If it is still hot when mixed with the fruit, it may not set evenly, and if it has begun to set too early it can clump. Mixing it when nearly cold keeps it fluid enough to blend smoothly.

Swap the red currant

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits better
  4. Red currantthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
