Why it works: Strawberry and peach match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 228 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓

Fruit Creams, and Italian Creams

Ingredients

Directions

Prepare the fruit

  1. For fresh fruit, crush it and sprinkle sugar over it to extract juice.

  2. If using peaches or other fruits, simmer them in syrup for a few minutes, then drain.

Make the cream

  1. Mix the cream with the jelly to flavor it.

  2. Add a few drops of cochineal for color if desired.

  3. Add cold fruit juice and lemon juice to the cream mixture.

Whisk and serve

  1. Whisk the mixture lightly until frothy, skimming off the foam.

  2. Drain the foam on a fine sieve or fill glasses directly.

What each ingredient does

Cream
Whisked, its fat traps air and forms the light, frothy foam that makes up the dessert.
Strawberry or raspberry jelly
Adds sweetness and fruit flavor to the cream.
Sugar
Sweetens the fruit and draws out its juice when crushed.
Fresh fruit
Supplies the main fruit flavor and juice that is folded into the cream.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.

The step that matters

Whisk lightly until frothy. Cream needs only gentle whisking to trap air into foam. Beating too long past this point can turn it grainy or buttery, so stop once it is frothy and skim off the foam.

Swap the lemon

How well each one fits the dish's main ingredients (cream, strawberry, peach, sugar):

  2. Raspberryfits better
  3. Blackberryfits better
