What each ingredient does

Gherkins
Make up the body of the pickle, and their firm texture is what the brining and vinegar work on.
Vinegar
Its acidity preserves the gherkins and gives the pickle its sharp, tangy flavour.
Coarse sea salt
Draws water out of the gherkins in the brine, helping them firm up and keep their crispness.
Ginger
Adds a warm, aromatic note that rounds out the sharpness of the vinegar.
Black peppercorns
Contribute a pungent, aromatic spice to the pickling liquid.

The step that matters

Simmer for 2-3 minutes. Heat softens the cell walls of cucumber-type fruit, so holding the gherkins in boiling vinegar for longer than the stated time can make them soft and limp rather than crisp.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, ginger):

  1. Allspicefits better
  2. Clovefits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against vinegar, ginger. Candidates are from the same food group and used in at least 100 recipes.
