What each ingredient does

Dried peas
Break down during long simmering to thicken the soup and give it body.
Beef broth
Provides the main liquid and savory meaty flavor for the soup.

The step that matters

Clear any scum from the surface before serving. Foam and impurities rise to the surface while simmering legumes and broth. Skimming them off keeps the soup clean-tasting and clear in appearance.

Swap the celery

The recipe marks celery as optional. How well each one fits the dish's main ingredients (peas, beef, pepper, bread):

  1. Marjoramfits about as well
