Modern Cookery
Ingredients
Directions
In a large pot, add enough water to cover the fish completely and bring it to a boil.
Once boiling, skim off any scum that forms on the surface.
Carefully add the fish to the boiling water and cook for 3 to 10 minutes, depending on the size and thickness of the fish.
Pour in an equal amount of cold water to the boiling water, then remove some of the water, leaving enough to keep the fish covered.
Add the remaining salt, then reduce the heat to maintain a gentle simmer until the fish is cooked through.
